As we know, that Big Mom's dream is to create a Utopia for all the races and people.
There's another person who could be the father to Katakuri that is not Kaido. Kaido is 70% possible "father" to the Charlotte triplets (Katakuri, Daifuku and Oven).
We have seen most of the races in One Piece in Totto Land Whole Cake Island.
Big Mom herself missed out on "giant" race because her daughter Lola declined in a runaway to marry the giant Loki. Big Mom lost to gained a powerful force (the giants).
There are three races that Big Mom is missing in her Utopia; giant race, King's race and lastly an unknown race.
Big Mom gave birth to her sons and daughters with different fathers of all kind of races.
Could the unknown race be Sky people? Maybe the Shandian? Katakuri and the triplets does not have wings due to having Big Mom's gene. Big Mom is an enormous human but not a giant.
Big Mom could be an artificial or an experiment human through gigantification. Notice how some of her children are big human but not giant in size.
Katakuri could be the result of superfecundation.
Superfecundation is the fertilization of two or more ova from the same cycle by sperm from separate acts of sexual intercourse, which can lead to twin babies from two separate biological fathers.
Kaido is one father of the triplets but there's one other father that also intercourse with Big Mom to birth the triplets. Katakuri's tattoo is not just for show (he does look like that one cool biker). The spiked wristband, skull belt and skull tattoo on his arm are biker's fashion style.
The only thing that is out of place and different is that tattoo on his back and his teeth (presumably from a fishmen father gene). The Charlotte family consisted of hybrids and mutated children with fathers from different races.
Katakuri could have another reason why to never fall on his back could be due to his back tattoo. We only see one of the husband of Big Mom; Pound. Streusen is the first husband of Big Mom and the co-founder of Big Mom Pirates. We never saw other Big Mom's husbands.
